Hi.. Namaskar.. How are you? Here I am doing good.
Today we are going to make a traditional chicken roast. Its been a while since we have done chicken items
Many have been requesting for Chicken dishes. So dont forget to try this tasty and easy dish
Regarding yesterdays Oats apple smoothie recipe, many asked me lots of similar questions
I had replied to many people. Since the doubts are again asked I shall reply to them here.
One of the doubt was if we cook used uncooked oats. Yes. Thats how I used it. If you want to cook you may cook, cool it and use it.
The 2nd doubt was if I had boiled the milk. No. It was straight from the fridge and unboiled. If you want you may boil it, cool it and then use.
I prefer green apple. If anyone of you want to use a red apple or so may change.
So I hope your doubts have been cleared. Now we shall move on to our traditional chicken roast recipe
Now we shall see how the make the traditional way of chicken roast or chicken peralan. You may call it anyway
I have taken 2 big finely chopped onions for this. You may take 3 medium sized if you dont have big ones.
Even if the onions quantity increases, its ok. Because it gives good gravy
1 ripe tomato, a piece of ginger, 4 garlic cloves and some split green chillies. I've taken around 6. You may change according to your spice taste
The ginger and garlic should be crushed well. Then we need Kashmiri chilli powder, garam masala, coriander powder and turmeric powder
The most important ingredient here is 1 glass thick coconut milk. I have taken 1 whole coconut and grinded it with 3/4cup water and extracted its milk
Now we need 1/2kg chicken. I have used breast pieces here. You can even use chicken with bones.
Now lets see how to make this. First place a kadai and add 3/4 tbsp kashmiri chilli powder and 1/2 tbsp chilli powder
You may adjust the spice as your taste.
Then we shall add 1tsp corriander powder, 1/4tsp turmeric and 1/4tsp garam masala powder. Nothing should exceed much
Add half of the thick coconut milk and mix the masalas well. By adding little milk we can get away with lumps.
If bachelors find it difficult to get coconuts to extract milk, they can use 1 glass of water here.
Now we shall pour the rest of the milk and mix it well. You can even use the tin coconut milk or coconut milk powder too
I dont know how they would taste because I always use fresh coconuts. Now our masalas have mixed well. We shall add salt as required
Always add salt little by little or as required. Once it exceed and catches into the chicken then we cant adjust the saltness in it.
This is almost similar to our mushroom pealan recipe. Just some differences here and there.
Now we shall add our well washed medium cut chicken pieces. I have used boneless pieces so that it would be easy for kids to have.
Its always nice to cut to small pieces.Only then the masalas will be absorbed well. You can even use bone pieces.
I've strained all the water in this. I mixed it in vinegar and salt and washed and cleaned it well.
Lets add it to the masala. Mix it well. You dont have to add any extra water. It will come from the chicken. We shall cook this in this coconut milk on medium flame.
The chicken we get here cooks very fast. If it takes longer time at your place, cook accordingly. You can cook it for a whistle in a cooker in India.
Here I dont need to do that. The chicken here cooks fast. So I shall close this with a lid and cook it.
Chicken is being cooked in another pan, by then we shall cook the masala in another pan
In another pan we shall make the masala. Add 2 tbsp coconut oil to it. You may use other oils if you want. Let this heat on medium flame.
Add some chopped coconut bits. This is optional. Since I have it, I am adding them. It gives a good flavour too. You may avoid it too if you dont want.
Saute it for a while. Add curry leaves and stir only on medium flame. Curry leaves have a magical flavour
It changes the smell suddenly. Now we shall add the crushed ginger garlic paste.
In mushromo recipe,I haven't added garlic
Saute it well till the raw smell goes. Its a very easy recipe. Some time is taken just to extract the milk.
Its an easy recipe. Coconut milk can be added or substituted with water. It will be tasty anyhow.
Coconut milk just gives it more flavour. Lets stir this till all the raw smell goes. Then we shall add the rest of the ingredients.
Now the raw smell has goes. Lets add the onions and green chillies now. Adjust the chillies as your spice level.
Chicken dishes are always good when they are a bit spicy. Add little salt. Remember we have added some to the chicken also. This is for the masala.
Saute this well on medium flame till it turns a golden colour. By then our chicken would also be cooked.
Remember to stir the chicken too once in a while so that it doesnt stick to the bottom.
Now we have lots of water from the chicken. Let it cook well. If you feel it should cook more then add some hot water and cook
Let the onions brown by then. I will be serving this with cooker ghee rice that I had shown long back
You can even serve it with chapathi, poori, batoora, puttu or rice. Its a good combination with all.
When you try this out you will understand what an easy recipe this is. So, dont forget to try this.
Its been 11years since I have started living in Dubai. It has given me lots of good memories.
I have done lots of blunders in the beginning. You must have understood my husband by now. He plays the fool with me.
I was a simple foolish girl coming from the interiors of Kerala to Dubai. I had all the simpleness in me then and now.
I am just sharing one of them with you now. You may also share yours. I was so shocked seeing a huge supermarket like LULU that time.
We lived in Qusais for 5years. There werent much shops or buildings there at that time. It was a dry place.
So we went to a small shop and he asked me to take milk from there. I was literally searching for milk there.
For me the picture of milk was the packet ones of Milma that we get in Kerala. I went and told him, theres no milk there.
Then he made fun of me and said here we get milk in cans and not covers. I felt so embarrassed and sad at that time. Though it was jut for fun, it hurted me.
Same way when we went to a restaurant at Sheik Sayed road, Opposite British Airways where Jan worked.
We sat and ordered food. I wasnt too fond of chicken at that time. So my son and myself ordered a potato curlz and Jan ordered some chicken
He told me did you know the owner of this restaurant was from Kunnamkulam. He said some Malayalee name also to me
He said thats why it was named Nandus and so on. I believed all what he said. I too was happy that we have Malayalees everywhere and trusted all he said
I told all this to my friend and they started teasing me. They said it wasnt Nandus but Nandos a South African restaurant here
Like that Jaan has played the fool with me many times. Even now he plays the same tricks with me. If you have any such things to share you may do ..
Our onions are almost done. Now we shall add half of the cut tomatoes to this first.
Stir this well till the tomatoes are cooked well. It doesn't have to be overcooked to a paste or so.
Now lets keep this aside and check on our chicken.
We have to keep stirring the chicken often else the masalas will stick on to the sides. Lets check the cooked chicken now.
It shouldnt be overcooked or else while roasting it the pieces will get shredded off
Now we should dry the liquid up. Lets cook the chicken till all the liquid is dried and then we shall add it to the onion masala
Now the chicken should be roasted till it turns brown in colour. Since I make this often, I know the taste and I dont eat meat now because I am on medication
I know these measurements are correct. I've noted it long back and make it often too. You may check the taste at this stage and see if its perfect.
Atlast if you feel the spice is less, you may add split green chillies at the end and stir well. Now stir well till the chicken and onion masalas and mixed well
Like I mentioned before, you can cook it more by adding boiling water if needed. Here its in the correct stage.
We have to saute this for a while on medium flame. If you feel oil is less, you may add some coconut oil
Never saute it in high flame. It may get roasted but wont absorb the masalas correctly
Kids would like to have boneless chicken. But I think taste wise, chicken with bone would taste better
Even if its a mutton recipe, bone ones give more flavour
I am adding 1tbsp more coconut oil now. If you feel spice is less, you may add split green chillies or little pepper powder now.
This should be roasted well only then that correct taste will be felt. By this time let me make my cooker ghee rice
Stir it on low flame. Be careful while stirring. The chicken should not break off while roasting.
Our chicken is almost roasted. Lets add some garam masala and pepper powder at this stage
Nothing should be over. The tast will change. Ive add 1/4tsp garam masala and 1/2tsp pepper powder to this
Mix well. It s already smelling awesome here. You can even shake the pan often so that pieces dont break
The pieces might break off when we always use a spoon. Anyhow slowly roast it without harming the pieces from the masala

Our chicken roast has reached the final stage. Check the salt and add if necessary. I know all of you are smart enough to do so
Now this is done. If we over roast it, then the chicken pieces will become dry. Its better to be a bit juicy.
By seeing this itself I can understand that it would taste awesome too. All of you please try this out
Lastly let me add some more curry leaves. My dishes look incomplete when they dont have my fresh curry leaves on it.
Those who have not seen my video of how to store curry leaves fresh for a long period please do see it. I had put many videos when I had gone to Kerala.
I am crushing 4 strands of curry leaves and adding it to this. Adding little coconut oil also to this.
If you are very health conscious. you may avoid this. But I always sprinkle some to the end
Mix well and keep it closed for 5minutes. I feel so sad that I am not able to eat this now. The smell itself makes us feel like having lunch
Now this is done. It smells like my easy prawns roast recipe of my Aunt. Its come out very well.
Lets keep this closed for 5 minutes and then serve. We had used only 1/2 of a tomato before.
You can garnish this with the rest half. But I am not doing it. I am stopping with the half I had added earlier.

I'm a person who loves malayalam and our culture

He cannot speak Malayalam so easily like English.We are communicating each other at home in Malayalam.
What to do??
When it comes to the kids growing abroad,they used to hear Malayalam in the home only and moreover they are listening to English in the outside world and also in YouTube and his world of stories
He is used to hear and talk in English more than Malayalam
In our case also,we were born and brought up in .So we love to talk and hear in Malayalam.Still we are living in an International society
SO we used to talk in Malayalam very less
We don't know in which society is he going to live in his future

Authentic Kerala Dishes with my personal Touch 😍 Serves for :3 Ingredients Chicken -1/2kg Kashmiri Chilli powder-3/4tbsp Chilli Powder-1/2 tbsp Turmeric powder-1/4tsp Pepper powder-1/2tsp Coriander Powder-1tsp Garam masala-1/4 tsp Curry leaves -plenty of Coconut oil- Salt Coconut Milk-1cup Tomato-1/2 Chilli-6 Onion -2 big Ginger -1 medium piece Garlic-4 Method In a kadai add all powders and coconut milk .Mix Well.. Then add chicken pieces and salt ..Mix well with hand.. Now close and cook..Once the chicken is cooked open the Kadai and allow the water to get dried.. Now the chicken pieces will be coated with masalas.. In other pan add coconut oil ,fry coconut pieces .. Then add ginger garlic paste ,saute well .. Now add finely chopped onion and green chilli and salt .. Add curry leaves too.. Saute till light golden colour .. Then add chopped tomato and cook .. Now to this add cooked chicken and mix well.. Roast well.. Add garam masala and pepper powder according to ur choice .. Finally sprinkle coconut oil and curry leaves ..Close for 5 five minutes and serve ..
